Sandy soil drains away before roots get a chance to use the water, and clay holds onto it too tightly for the same roots to breathe. Peat moss works on both problems at once, aerating heavy ground while holding moisture in soil that's too free-draining to begin with.
It also lifts acidity, which matters for azaleas, camellias, hydrangeas, daphne, ferns, palms and roses that all prefer a more acidic bed than standard garden soil provides. Works equally well spread as a moisture-saving mulch if digging it in isn't practical.
