A bottle of butterscotch schnapps at the bottle shop is mostly sugar and colouring, and this essence gets you the same rich, toffee-sweet result at home.

Combine the 50ml bottle with 850ml of vodka or a neutral spirit at 38%, 350g of sugar and 260ml of water, then shake it together. That's about 1.4 litres of finished liqueur, styled on a de Kuyper Butterscotch.

Sweeten it up or hold back a little depending on how you like it, and the whole batch comes together on the kitchen bench in about fifteen minutes. It keeps well once bottled, so it's worth having a batch ready for a cold night or to hand round at Christmas.
